San Diego native Chef Travis Swikard spent over a decade in New York City cooking alongside Daniel Boulud and Gavin Kaysen before returning home to open Callie, where his bright, ingredient-driven “Cuisine du Soleil” earned national recognition from the Michelin Guide, Esquire, and Robb Report. A Southern California native, Ann Sim was raised in a family rooted in hospitality. After earning a B.A. in Art History, she moved to New York City pursuing the art world before finding her true calling in restaurants. She began her fine dining career with Daniel Boulud’s group before joining Eleven Madison Park, rising to Captain during its award-winning years, including #1 on World’s 50 Best Restaurants in 2017. After helping open The NoMad Hotel in Los Angeles, Ann returned to San Diego to join Callie’s opening team and is now Director of Operations, overseeing Callie and Fleurette.

With a background in luxury beauty and brand building, most notably as a founding member of Westman Atelier, Mia brings a deep focus on storytelling, craftsmanship, and guest experience. She has led Callie’s marketing since its opening, shaping the restaurant’s voice and connection to its community. Mia now oversees marketing for both Callie and Fleurette, building their shared identity and growing the family business alongside her husband, Chef Travis Swikard.

Born and raised in Carlsbad, Steve Dreifuss began working in restaurants at 15 while balancing academics and collegiate basketball, where he learned discipline, teamwork, and leadership. He built his career through resilience and determination, guided by mentors who taught him that true hospitality begins with putting people first. After opening and leading multiple San Diego concepts, Steve now serves as General Manager at Fleurette, focused on thoughtful service and strong, connected teams.

Originally from Orlando, Tracy Latimer grew up in a family that celebrated life around the kitchen table. After refining her craft in Boston, she moved to San Diego in 2020, where she designed Callie's award-winning Mediterranean wine program (including a spot in Wine Enthusiast's "50 Forward Restaurants," 2024). Tracy now leads the wine program at Fleurette, connecting guests to France's viticultural heritage and the winemakers it inspires.

Born and raised in Orange County, James Roe studied physics before discovering his passion for craft cocktails at 21 whilelearning under Rich Ohtsuka at The Cellar Restaurant & Spirit Room in Fullerton. Over five years, he mastered classics and developed house-made bitters, tinctures, syrups, and clarified liquids, eventually becoming Bar Manager. In 2018, James moved to San Diego, where he met Travis Swikard and later led the bar program at Callie before joining Fleurette, emphasizing seasonal flavors and sustainable practices behind the bar.
